Least common professions?

I am curious what the least common professions you've seen in MO1 are and what new professions there may be for MO2.

There is alchemist which is, from what I've heard, a very difficult profession but I'm looking for something far more niche.

There were professions for house decoration such as carpentry, tailoring, taxidermy, tinkering etc. Didnt see a lot of those items being sold. Maybe open Tindrem IKEA?

Not even alchemists often made vials (source: many public complaints). Glassblowing (if that's what it was called) wasn't necessarily hard, but maybe it was hard to find.
