You can defeat anything solo... with a mounted archer. Speaking from experience.

Not sure if it was a mountain spider but I got attacked by a large spider on the mountain that Kran is on.

It surprised me and I took a beating. But I killed it with a flake mace while wearing one of the light armors.

So if that was a mountain spider then they can be killed solo with melee. Probably pretty easy with good gear.
