Why I Don't Play MO2

I bought MO2 when it first came out and spent some time in Haven. Each year since I have looked in on MO2 and been very impressed with the improvements and new features. But I will not play it again until you give me at least 3000 Profession Skill points.
There are many other ways you can constrain crafting to limit the highest level crafting. (E.g., New World applies at least six other constraints when you reach Lvl 200. Or you could have a separate skill point pool just for crafting). But I don't want to be so incredibly limited in what I can gather and process/refine.

No. On leaving Haven I would join a Guild and adapt my character to be a useful member of the community.
I will try to be more clear. I am advocating two adjustments to Professions.
(1) A separate small pool of crafting points to directly restrict the number of types of weapons and armor any one character can craft.
(2) A big pool of gathering/harvesting/refining/processing points. So that when far from home, I do not have the frustration of coming across a lot of different types of materials that aren't gatherable. I would also like to be able to process/refine a variety of the gathered mats.

awesome i luv it. crafting the perfect Khurite blade but not being able to craft the perfect Risar blade makes great sense.

I think for your first point, we already have that. On my character, for example, I can make soft armours, shields, blades and horse gear. I could specialise, or be a generalist. But not be both.

For Your second point, the higher tier gatherables and materials require specialisation, so that they do not lose their value and upend the in-game economy. For lower tier materials, there are surprisingly many different types, with by-products being extractable and refinable to produce precursors for higher tier materials. Which can then be sold to specialists for a high price or passed on to your guildmates to produce those materials, which in turn benefits you and others in your guild.

There's a player-made tool which is very useful for those interested in resource processing: https://www.mortalonlinemap.info/emulator/

2nd Character slot = additional 1200 profession points.... So giving you 2400 total per account... close enough!
